Ricotta and coriander spread :: Pasta de ricotta e coentros

Summer asks for refreshing and simple treats, like this coriander and ricotta spread. I love coriander in pretty much everything: salads, on its own, or mixed with olive oil over boiled potatoes… the list goes on and on.

One of these days I was thinking about making a cheese spread and inevitably coriander came to my mind. The recipe came out fresh and it is delicious on some fresh baked bread: I hope you enjoy it!

O Verão pede petiscos simples e refrescantes, como esta pasta de riccota e coentros. Adoro coentros em quase tudo: saldas, sózinhos… ou misturados em azeite sobre batatas cozidas… a lista continua.

Um destes dias estava a pensar em fazer uma pasta de queijo e inevitavelmente  lembrei-me de usar coentros. A receita resultou fresca e é deliciosa sobre pão acabado de cozer: espero que gostem!

Ingredients: coriander, garlic clove, ricotta and salt

Recipe

  • 1 ricotta cheese
  • 1 bunch of coriander
  • 1 tsp of salt
  • 1 garlic clove

Mix all the ingredients in a food processor or use a hand blender. Alternatively you can chop the coriander and garlic and mix with the cheese and salt by hand. Mix them into a smooth paste. Enjoy!

Receita

  • 1 queijo ricotta (ou 1 requeijão)
  • 1 molho de coentros
  • 1 colher de chá de sal
  • 1 dente de alho

Misturar todos os ingredientes no robot de cozinha ou com a varinha mágica. Em alternativa, picar os coentros e o alho e juntar ao queijo e ao sal. Misturar até obter uma pasta cremosa. Bom apetite!
