Lemon and Poppy Seed Muffins :: Queques de limão e sementes de papoila

For most part of the weekend, wind and rain have painted the landscape outside the window leaving me to seek comfort in baking. For quite a while I have been looking at Rose Elliot’s recipe for lemon and poppy seed muffins. Having all the ingredients at hand I finally tried it.

The result was a warm lemony treat that is quite filling and goes perfectly well with a hot cup of earl grey or an herbal infusion. If you want to give it a try, you can find the recipe at the end of the post. What about you, how do you seek comfort on rainy days?

Durante a maior parte do fim de semana, o vento e a chuva pintaram a paisagem do lado de fora da janela, e levaram-me a procurar conforto na cozinha. Há já algum tempo que tinha visto a receita da Rose Elliot para queques de limão e sementes de papoila, e como tinha todos os ingredientes à mão decidi aventurar-me.

O resultado é uma delicía com sabor a limão e bastante reconfortante. Os queques são perfeitos acompanhados por uma caneca de Earl grey ou com uma infusão de ervas. Se quiserem experimentar, a receita está no final do post. E vocês, onde encontram conforto nos dias de chuva?

Lemon and Poppy Seed Muffins

Lemon and Poppy Seed Muffins Recipe (makes 16)

Recipe adapated from Rose Elliot’s New Complete Vegetarian

  • 250 gr plain flour
  • 2 tsp baking powder (I have used half)
  • 2 tbsp poppy seeds
  • 200 gr golden caster sugar
  • 6 tbsp mild-flavoured olive oil
  • 6 tbsp soya milk
  • 2 tbsp freshly squeezed lemon juice
  • Grated zest from 1 lemon
  1. Pre-heat the oven to 180º. Line two muffin tins with paper cases.
  2. Sift the flour, baking powder and salt into a large bowl, then mix in the poppy seeds and caster sugar.
  3. In a separate small bowl mix together the oil, soya milk, lemon juice and rind.
  4. Pour the oil mixture into the bowl with the flour and mix quickly with a fork until just combined. Spoon the mixture into the paper cases, filling them to the top.
  5. Bake for about 15 minutes or until the muffins feel firm and springy to a light touch. Leave to cool on a wire rack.

Receita de queques de limão e sementes de papoila (faz 16)

Receita adaptada do livro Rose Elliot’s New Complete Vegetarian

  • 250 gr. farinha de trigo
  • 2 c. chá de fermento
  • 2 c. sopa de sementes de papoila
  • 200 gr de açucar amarelo
  • 6 c. sopa de azeite
  • 6 c. sopa de leite de soja
  • 2 c. sopa de sumo de limão
  • Raspa de 1 limão
  1. Aquecer o forno a 180º. Colocar 16 formas de queque de papel num tabuleiro.
  2. Peneirar a farinha, o fermento e o sal numa tigela, e depois junte as sementes de papoila e o açucar.
  3. Numa tigela à parte misturar o azeite, o leite, o sumo e a raspa de limão.
  4. Junte a mistura de azeite com a mistura da farinha e misture rapidamente com um garfo até ligar a mistura. Com uma colher coloque a mistura nas formas, enchendo até ao topo.
  5. Coloque no forno durante 15 minutos ou até os queques ficarem firmes ao toque. Deixe arrefecer.
